History

Chipá has been prepared in South America since before the 1500s by the Guarani people who first inhabited the land. At the time, wheat was not available in South America, so this bread was made from cassava flour or cornflour and water. Towards the end of the 1500s, colonists from Spain and the Jesuit missionaries settled in the region. They brought milk, cheese, eggs, and livestock like cattle and chicken, and through the introduction of these ingredients, the humble chipá evolved to what it is today.

About Us

My Paraguayan and Argentine family are the most important people to me in the whole world and our culture will always be a part of me. When we moved to the United States, I missed my family and culture more than anything. Inevitably, everything changed drastically. The one thing that would fill the room with nostalgia, would be the aroma of chipá’s baking in my parents’ kitchen. This was a little piece of home that traveled with us that no one could take from us. Conveniently, the essential ingredients are easily accessible almost anywhere you go. Before I knew it, I became the chipá pâtissier of my family. Once I was handed this thrown, I felt a stronger sense of belonging to my origins and family. Ever since, I’ve been passionate and grateful of our family recipe that has been enjoyed and embraced through generations. This is the sentiment I want people to feel when they try our chipá. Who knew a cheese bread could bring out all this passion out of a person!

 

Tapioca flour is the new bread! This starch is extracted from cassava root and is well known as a dietary staple in many countries. Naturally, tapioca is gluten free, low in cholesterol, low in fat and low in sodium. The unique properties, texture and nutritional values have made tapioca one of the most popular substitutes for wheat flour in gluten free baking. We started noticing more and more individuals requesting gluten free options in our community. We saw a demand that we could potentially help. That was it, we enthusiastically wanted to start sharing our beloved chipá with our community. This important piece of home that moved me deeply could now bring this emotion out in others.
